S’mores might be one of those classic pairings you’re not supposed to mess with… but I’m pretty sure I just came up with a combo that’s even better than the original!
This Brownie Strawberry S’mores could be considered the grown up version of the original campfire treat.
We recently purchased a backyard fire pit and we’ve been enjoying s’mores most every weekend. In fact my girls can’t seem to get enough! One day this week I got a good amount of house cleaning out of my girls with the promise of roasting marshmallows at night. =)
Needless to say, when Campfire® Marshmallows sent a big box of marshmallows to our house for me to “play” with, my girls thought it was the best mail day ever! The challenge was to create a roasted marshmallow treat that beats the classic graham cracker and chocolate combo. I know this may be bold to say… but I think I did it!
Rich fudge brownies, fresh strawberries and gooey roasted marshmallows… my whole family fell in love with this delicious combo and I think you will too!
This is a perfect recipe to enjoy with family and friends on a cool summer night!
You can prepare the brownie bites and strawberries ahead of time, then add the final ingredient… fresh, warm, gooey, roasted marshmallows!
There is something so magical about roasting marshmallows on a fire… I don’t know of anyone who doesn’t love it!
Campfire® Marshmallows are perfect for roasting! I used regular sized marshmallows this time, but feel free to go wild and use Campfire® Giant Roasters!
This is a recipe I know we’ll be enjoying quite a few more times this summer!

How to Make Brownie Strawberry S’mores
Brownie Strawberry S'mores
Ingredients
- 18 oz brownies 1 box, cut into small bite sized pieces
- 20 fresh strawberries halved
- 20 marshmallows
Instructions
- Prepare and bake brownies, using the recipe or boxed mix of your choice. Once fully cooled, cut into bite sized pieces.
- Remove strawberry stems, then cut strawberries in half (or into large pieces).
- Add a few brownie bites and strawberries to small bowls.
- Roast marshmallows to desired doneness over an open fire. Add marshmallows to bowls of brownie and strawberry and enjoy immediately.

These look seriously good! That drizzle of caramel in that last photo made me wonder how it might be if you added a tiny smidge of that to your yummy strawberry concoction!

We usually do marshmallows on Friday night, you have an open invitation! =) I am in total agreement that caramel makes everything better! I’d considered it myself, but didn’t go for it this time. Some hot fudge and/or toasted nuts could be good too!
