One of the easiest ways to enjoy the summer bounty of berries is this quick and easy Berry Galette recipe. It’s so fun to make with the kids and the best part is you can use any fruits you have on hand.
What Is A Galette?
The term galette comes from French cuisine and is used to describe any freeform flat round cake made of bread or pastry. Typically a galette contains a fruit filling with a pie crust that is hand wrapped into a round shape and baked.
What Is The Difference Between A Galette And A Pie?
A galette is filled with fruit and are formless which makes them very easy to make! A pie can be sweet OR savory and are baked in a pie dish.
Galettes are so much easier to make than traditional pies, with half the work and all the flavor!

Mini Berry Galette Ingredients
Let’s take a quick look at what you’ll need to create these mini berry galettes and, as always, you can find the full, printable recipe card at the end of this post.
- blueberries, blackberries, strawberries – this is my favorite berry combination but feel free to substitute your favorite berries or fruit.
- granulated sugar – to add additional sweetness to the berry galette filling.
- cornstarch – thickens the berry filling.
- salt – enhances the flavor of the berries.
- lemon zest – brightens the overall taste of the galette.
- refrigerated pie crusts – feel free to use your favorite homemade pie crust recipe instead.
- egg – brushed on pie crust so that it gets beautifully golden.
- sanding sugar – instead of using granulated sugar to sprinkle on the pie crust before baking, try using sanding sugar to give your galettes a more bakery style look.
How To Make Mini Berry Galettes
- Preheat oven and prep baking sheet. Preheat oven to 375°F. Line a large baking sheet with parchment paper and set aside.
- Create berry filling. Add blueberries, blackberries and strawberries to a large mixing bowl. Gently stir in granulated sugar, cornstarch, salt and lemon zest to combine.
- Cut out pie crust circles. Lightly flour a large cutting board or smooth service and gently unroll pie crusts. Use a 4″ cutter to cut out circles.
- Add filling to pie crusts. Place the pie crusts on the prepared baking sheet and spoon about 3 tablespoons of the berry mixture onto the center of each pie crust, being careful to leave a ½ inch border at the edge of the crust.
- Form galettes. Gently fold the pie crust over the berry filling creating pleats as you go. Press down gently on the pleated pie crust to make sure it’s secure before baking.
- Egg wash. Lightly beat the egg and gently rush the edges of the galette with the beaten egg. Sprinkle with the reserved sugar. Sanding sugar is another option.
- Bake galettes for 18 to 20 minutes or until edges are golden brown.
- Let cool for 5 minutes.

- ½ cup blackberries
- ½ cup sliced strawberries
- ¼ cup granulated sugar divided
- 1 tablespoon cornstarch
- ¼ teaspoon salt
- 2 teaspoons lemon zest
- 2 refrigerated pie crusts
- 1 egg
- sanding sugar optional, can also use turbinado sugar

- Preheat oven to 375°F. Line a large baking sheet with parchment paper and set aside.
