S’mores Rice Krispie Treats Recipe
If you love all things summer, toasting marshmallows, and gooey chocolate, you’re going to adore these s’mores rice krispies! This simple recipe is made up of a rice krispie base layer topped with rich chocolate, crunchy graham crackers and toasted marshmallows that hits all the right notes.
Make these s’mores bars for a kid’s birthday party, a fun snack to have around the house, or literally any party ever! I promise, they’re going to be a universal favorite!

How to Make S’mores Rice Krispie Treats
Here are the step-by-step instructions to make these gourmet Rice Krispie treats! Remember, the whole recipe is in the complete printable recipe card below.
Rice Krispie Treats
- Butter a 9 x 13-inch pan, or spray it lightly with cooking spray.
- Melt butter and marshmallows in a large microwave-safe bowl in the microwave until melted.
- Add rice krispies and Golden Grahams cereal and stir to combine.
- Add the mini chocolate chips, stir quickly, and immediately transfer to the prepared pan. Press it into the pan with a spatula.
Chocolate and Graham Cracker Layers
- Melt chocolate in a microwave (at 50% power), in 30-second intervals, stirring between intervals, until melted.
- Spread chocolate on top of rice krispies treats in the pan.
- Lay graham cracker squares on top, leaving a tiny bit of space between each cracker to cut the bars easier.
- Cover and chill for 10 to 15 minutes or until the chocolate has set up.
Toasted Marshmallows
- Cut into squares with a sharp knife, using the lines between the graham crackers as a guide and place on a large baking sheet.
- Cut large marshmallows in half, (just a couple at a time) and place cut side down onto graham crackers.
- Use a kitchen torch (or propane torch) to toast the marshmallows. If you don’t have a torch, this would be a fun reason to get one, or you can toast the marshmallows in the oven.
- Allow the treats to cool, then enjoy!
Leaving a small space between the graham crackers will making cutting the treats into squares a breeze!
Storage Information
Package your s’mores rice krispie treats in an airtight container for up to two days. I don’t think they’ll last long enough to store though!
Variations To Try
It’s hard to believe s’mores can be improved, but there are so many different ways to elevate them! Here are a few of my favorite ideas – let me know what you decide.
- Use chocolate-flavored graham crackers to keep the same texture but emphasize the chocolate flavors!
- Mix mini M&Ms into the Rice Krispie mixture for a little crunch.
- Instead of semi-sweet chocolate chips on the top, use peanut butter chips.
- Brown your butter on the stovetop and then add the marshmallows. The brown butter will add a depth of richness and flavor.
- Instead of chocolate chips, put a layer of Hershey’s bars on top of the rice krispie treats for a more traditional s’mores look.
- Use marshmallow fluff as the topping if you don’t want to use jumbo marshmallows, just keep in mind that it won’t set, so they’ll be a little messier.
Trish’s Tips
- Grease the pan very well, or line it with parchment paper and grease it for easier removal.
- Keep an eye on the microwave when you’re melting the marshmallows and chocolate because cooking times may vary! You don’t want to burn either mixture.
- Try using a plastic or silicone spatula sprayed with a bit of cooking spray to mix the Rice Krispie mixture. It’ll be super sticky.
- If you don’t have a chef’s blow torch to toast your marshmallows, just broil them! Preheat your oven to broil and place the baking sheet of treats in the oven, leaving the oven door slightly ajar. Broil for about 30 seconds, but watch them, they can burn quickly!
- You can reheat them in the microwave for 10-15 seconds to get them a little softer and more melty!

Equipment
Ingredients
- 3 tablespoons butter
- 4 cups mini marshmallows or about 40 regular/large marshmallows
- 5 cups Rice Krispies cereal
- 1 cup Golden Grahams cereal
- ½ cup mini chocolate chips
Top layer
- 4 ounces milk chocolate chips or semi-sweet chocolate chips (about 1 cup)
- 10 full sized graham crackers broken in half (slightly more or less, depending on the pan you use)
- 40 large marshmallows approximately
Instructions
- Butter (or spray lightly with cooking spray) a 9″x13″ pan.
- In a large microwave safe bowl, place 3 tablespoons of butter (cut into a few pieces), and 4 cups of marshmallows. Microwave about 3 minutes (stirring after 2 minutes) watch the microwave, cooking times may vary. Cook in microwave until butter and marshmallows are melted. - Add rice krispies and golden grahams cereal and stir to combine. (Try using a plastic or silicone spatula sprayed with a bit of cooking spray).5 cups Rice Krispies cereal, 1 cup Golden Grahams cereal

- Melt semi-sweet chocolate (or chocolate chips) in a microwave (at 50% power), in 30 second intervals, stirring between intervals. Heat until just melted. Spread chocolate on top of rice krispies treats in pan.4 ounces milk chocolate chips
- While the chocolate is still warm, lay graham cracker squares on top, leaving a tiny bit of space between each cracker.10 full sized graham crackers
- Put entire pan of “treats” in the fridge or freezer (or a cool location) until the chocolate has set (about 10-15 minutes). Cut into squares with a sharp knife, using the lines between the graham crackers as a guide. Place treats on a large baking sheet, separated slightly.40 large marshmallows
