Creamy Chocolate Cheesecake

Rich, creamy and simply the ultimate chocolate dessert!

Prepare the crust

Crush the cookies in a plastic bag. Then place cookie crumbs in a small bowl.

Melt the butter in a small bowl, then pour the butter into a bowl of cookie crumbs and stir until evenly moist.

Divide the mixture between the two cheesecake pans and press crumbs firmly into the bottom of the pans. Bake the crust.

Prepare the filling

In a small bowl, heat the chocolate chips in the microwave until almost melted. Stir until fully melted and smooth, then set aside.

In the bowl of an electric mixer, blend cream cheese until smooth.

Blend sugar, salt, sour cream, and vanilla continue to blend.

Add melted (and cooled) chocolate and blend to combine.

Add beaten egg to cheesecake mixture and blend on low speed until just combined.

Pour filling into baked crusts. Bake.
